In Madras class, we're offering a menu featuring simmered dishes sublimated in a porcelain service that borrows its shapes from seaside pebbles. As for desserts: baba au rhum, pain perdu, tropézienne or artisanal sorbet... there'll be something for everyone!
Our desire to promote the products of our overseas regions stems from our origins, our DNA.
Our West Indian company specializing in the Caribbean and French Guiana also wants to help you discover and share local products, ready-made meals, spices and drinks, without which traveling wouldn't have the same flavor!
Discover the new Madras (Business) class menus celebrating Guyanese gastronomy (on our route departing from Cayenne's Félix Eboué airport to Paris Orly).
For starters, enjoy octopus salad with chadeck, followed by the famous Diable sauce prawns, or a fillet of Acoupa with couac gratin;
A roulade of chicken stuffed with prawns, giraumon sauce and yam purée, or a Creole-style beef broth.
For Ti' punch lovers, we suggest Rhum Belle Cabresse, and for the more daring, Guyana's TOCO chili pepper if you prefer spicier dishes.
Air Caraïbes supports local producers such as "Saveurs Party's" and these tasty "comtesses" cookies that enhance our Business class desserts.
